Baked Duck
- 2 ducks, plucked and cleaned
- 2 teaspoons salt
- 1 teaspoon Rosemary
- ¼ cup medium size Orange slices
- ¼ cup medium size Onion slices
- ¼ cup medium size Celery slices
- ¼ cup medium size Apple slices
Clean bird and rinse well. Put in a large bowl and cover with water and a little salt. Soak over night. Drain and rinse well again. Stuff birds with medium sized pieces of orange, onion, celery, and apple. Place bird on large piece of tin foil and sprinkle outside with chopped rosemary(optional). Wrap birds tightly in the tin foil. Depending on the size of the birds, bake at 325 for about 2 hours.
Serve with wild rice and green beans.
