Honey and Citrus Basted Grilled Quail
Honey and citrus complement the grilled notes in these delicious game birds.
- 3 tablespoons Ducks Unlimited® Lemon & Lime Pepper Seasoning & Rub
- 1 tablespoon Ducks Unlimited® Poultry & Game Seasoning & Rub
- 3 tablespoons honey
- 1 ˝ cups orange juice
- 1 ˝ tablespoons cornstarch mixed with equal part cold water
- 8 whole quail
In small saucepan, combine first five ingredients and bring to boil over medium-high heat. Reduce heat to low and cook for 5 minutes. Allow mixture to cool. Brush quail lightly with citrus mixture, reserving enough to brush each quail two more times during grilling. Place quail on a medium-hot grill and cook for 4 minutes. Brush each quail, turn and brush the other side. Cook for an additional 4 minutes or until quail are no longer pink inside and juices run clear when cut. Before serving, drizzle any remaining citrus mixture over each quail.
