Grilled Pepper Duck
The bold flavor of this hickory smoked duck is perfect for warm weather grilling.
- 1 ˝ cups Ducks Unlimited® Seasoned Hickory Marinade
- 3 tablespoons Ducks Unlimited® Steak & Chop Seasoning & Rub
- 2 large ducks, split in half along the backbone
- 2 green bell peppers, seeded and halved
- 1 large yellow onion, quartered
In extra large resealable plastic bag, combine Seasoned Hickory Marinade and Steak & Chop Seasoning & Rub. Place duck, peppers and onion in bag; seal. Marinate in refrigerator for 1 to 12 hours. Remove duck, peppers and onion from bag, discarding used marinade. Grill duck over medium-high heat for 8 to 10 minutes per side. Grill vegetables over medium-high heat until tender and slightly charred; then slice. Top duck with grilled peppers and onion.
